Taco Tuesday
OK so it's not Tuesday, but who cares! Any day is a good day to eat these delicious crunchy chicken tacos. It's easy and simple to prepare, give it a try. I know you'll love it!
Recipe:
about 2 cups of shredded chicken ( I use breast ) season to taste (s&p or season salt)
8 corn tortillas
1/4 to 1/2 of canola oil
a plate covered with 3 layers of paper towels to drain excess oil on the tacos
toppings
shredded lettuce
chopped tomatoes
avocado slices
sour cream
shredded cheddar cheese
salsa (I make my own)
Heat a skillet on med/low and add the oil. If the oil start to smoke then turn down the heat just a bit. Place enough seasoned chicken on one side of the cold corn tortilla being careful not to overload it. Place the tortilla flat on the skillet, after a few seconds (5) flip the other side of the tortilla over the chicken. Let it crisp for about 2 minutes on each side. When golden brown place then on the paper towels for a few minutes, and stuff them with your choice of toppings! That's all folks.

Old roof coming down...and a roofer too!
I'm getting a new roof! Today all the old roof is coming down, one little problem though...a roofer came down with it! Yes, I laughed and I am not ashamed to say it. That's just me! I know it's wrong, but oh so funny. He is okay, no broken bones, or blood, just a big, big, bruise on his leg. Carry on amigos!

Buttermilk Oatmeal Pancakes
I was looking for a way to add nutrition to the basic pancake, and with a little though & inspiration this is what I came out with. They came out naturally sweet so little syrup was needed. Let me know when you try this, enjoy!
Recipe:
1 cup of your basic pancake mix. ( I used Aunt Jemima) follow the box directions
1 cup of buttermilk instead of milk
1/4 cup of oatmeal (quick 1 minute kind)
1/2 of smashed fresh banana
1 teaspoon of vanilla
Mix wet ingredients well first, then add the dry ingredients (mix and oats) Heat pan, add about 1 teaspoon of oil ( you can use butter) well you know the rest. :)
